  • 1 lb ground beef or turkey
  • 1 onion, diced
  • 1 can black beans (14 oz), drained
  • 1 can corn (14 oz), drained
  • 1 can diced tomatoes (14 oz)
  • 4 cups broth (chicken or beef)
  • 1 packet taco seasoning
  • Salt & pepper, to taste

Optional Toppings

  • Sour cream
  • Shredded cheese
  • Tortilla chips


Instructions

  1. Brown the Meat and Onion: In a large pot or skillet over medium heat, cook the ground beef or turkey along with the diced onion until the meat is fully browned and no longer pink. Drain any excess fat before proceeding.
  2. Add Remaining Ingredients: Stir in the drained black beans, corn, diced tomatoes (with their juice), broth, and the taco seasoning packet. Mix everything well to combine.
  3. Simmer the Soup: Bring the mixture to a gentle boil, then reduce heat to low and let it simmer uncovered for about 15 minutes to allow flavors to meld.
  4. Serve with Toppings: Ladle the soup into bowls and garnish with optional toppings like sour cream, shredded cheese, and tortilla chips for added texture and flavor.

  • For slow cooker method: Combine all ingredients except toppings in a crockpot; cook on high for 4 hours or low for 6 hours.
