Ingredients
Chicken:
- 1 ½ lbs boneless, skinless chicken breasts or thighs
Seasoning:
- 1 ½ tsp paprika
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp salt
- ¼ tsp black pepper
Skillet:
- 2 tbsp olive oil
- 4 tbsp unsalted butter, divided
- 3 garlic cloves, minced
- ½ cup chicken broth
- ½ cup heavy cream (or half-and-half for lighter version)
- ½ tsp smoked paprika
- 1 tsp lemon juice
- 2 tbsp chopped fresh parsley (for garnish)
Instructions
- Season chicken: Pat chicken dry and season both sides with paprika, garlic powder, onion powder, salt, and pepper.
- Sear: Heat olive oil and 1 tbsp butter in a large skillet over medium-high heat. Add chicken and cook 4–5 minutes per side until golden brown and cooked through. Transfer to a plate and keep warm.
- Make the butter sauce: In the same skillet, reduce heat to medium. Add remaining butter and minced garlic; sauté about 30 seconds until fragrant.
- Deglaze: Pour in chicken broth, scraping up browned bits. Stir in cream, smoked paprika, and lemon juice. Simmer 2–3 minutes until slightly thickened.
- Combine: Return chicken to skillet, spooning sauce over the top. Simmer another 2 minutes to blend flavors.
- Serve: Garnish with chopped parsley and a squeeze of lemon. Delicious with mashed potatoes, rice, or warm rolls.
