Ingredients
For the Cookies:
1 cup all-purpose flour
1/2 cup granulated sugar
1/2 cup unsalted butter (room temperature)
1 large egg
2 tsp instant coffee granules
1/4 cup cocoa powder (plus extra for dusting)
For the Mascarpone Filling:
1/2 cup mascarpone cheese
1 tsp vanilla extract
For the Espresso Syrup:
1/4 cup espresso or strong brewed coffee
2 tbsp sugar (for syrup)
Instructions
Preheat the Oven:
Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
Make the Cookie Dough:
In a bowl, whisk together flour, instant coffee, cocoa powder, and a pinch of salt. Set aside.
In another bowl, cream butter and sugar until light and fluffy. Add the egg and vanilla extract, mixing well.
Gradually add the dry ingredients to the wet ingredients until just combined.
Shape the Cookies:
Scoop dough onto the prepared baking sheets, spacing the cookies about two inches apart. Flatten slightly with a spoon or your fingers.
Bake the Cookies:
Bake for 10-12 minutes, or until the edges are golden, but the centers remain soft. Let the cookies cool completely on a wire rack.
Prepare the Espresso Syrup:
In a small saucepan, heat the espresso and sugar over medium heat until the sugar is dissolved. Set aside to cool slightly.
Assemble the Sandwich Cookies:
Spread a layer of mascarpone cheese on one cookie, drizzle with a little espresso syrup, and top with another cookie to form a sandwich.

Notes
If you prefer a stronger coffee flavor, you can add more instant coffee granules to the dough.
