Ingredients

For the Roasted Sweet Potatoes:

2 large sweet potatoes, peeled and cut into bite-sized cubes

2 tablespoons olive oil

1 teaspoon garlic powder

½ teaspoon paprika

¼ teaspoon cinnamon

½ teaspoon salt

¼ teaspoon black pepper

For the Hot Honey Ground Beef Bowls:

1 lb ground beef (93% lean)

1 tablespoon olive oil

1 yellow onion, diced

1 taco seasoning packet (or your favorite seasoning blend)

1 cup cottage cheese (low-fat preferred)

1 avocado, sliced

2 tablespoons hot honey (adjust to taste)

Salt and black pepper, to taste

Instructions

Roast the Sweet Potatoes:
Preheat your oven to 400°F (200°C). In a large mixing bowl, toss the cubed sweet potatoes with olive oil, garlic powder, paprika, cinnamon, salt, and black pepper. Make sure the potatoes are well-coated with the seasoning.
Transfer the seasoned sweet potatoes to a large baking sheet and roast for 45-60 minutes, stirring halfway through, until tender and golden.

Cook the Ground Beef:
While the sweet potatoes are roasting, heat olive oil in a large skillet over medium-high heat. Add the diced onion and cook for 5-10 minutes, or until softened.
Add the ground beef to the pan, breaking it up as it cooks. Season with salt, black pepper, and taco seasoning, following package instructions. Once the beef is browned and fully cooked, set it aside.

Assemble the Bowls:
Once the sweet potatoes are done, divide the roasted sweet potatoes, seasoned ground beef, cottage cheese, and sliced avocado into bowls. Drizzle hot honey over the top to your desired level of sweetness and spice.

Serve & Enjoy:
Serve the bowls immediately for a warm, satisfying meal. Enjoy!

Notes

Expert Tips:

Customization: Swap ground beef for ground turkey or chicken if you prefer a leaner protein.

Extra Veggies: Add roasted broccoli, sautéed zucchini, or fresh lettuce for more texture and flavor.

Hot Honey Substitute: If you don’t have hot honey, mix regular honey with a pinch of red pepper flakes to achieve the same sweet and spicy kick.

Make it Creamy: If you’re not a fan of cottage cheese, consider using Greek yogurt or sour cream for a creamy texture.

Storage:
Store any leftovers in an airtight container in the refrigerator for up to 3-4 days. The sweet potatoes and ground beef can be stored separately for easier assembly when reheating.
