Ingredients
Meat and Seasoning
- 1 pound ground beef
- 1 packet taco seasoning (about 1 oz)
Vegetables and Beans
- 1 cup corn (fresh, frozen, or canned, drained if canned)
- 1 cup black beans, drained and rinsed
Other Ingredients
- 2 cups crushed tortilla chips
- 2 cups shredded Mexican-blend cheese (cheddar, Monterey Jack, etc.)
Instructions
- Preheat the oven: Set your oven to 375°F (190°C) to ensure it’s ready by the time the casserole is assembled.
- Cook the beef: In a skillet over medium heat, brown the ground beef until fully cooked, breaking it apart with a spatula. Drain excess fat if necessary.
- Add seasoning and mix-ins: Stir in the taco seasoning packet along with the corn and black beans, cooking for a few more minutes until the mixture is heated through and well combined.
- Assemble the casserole: Transfer the beef mixture into a baking dish, spreading it evenly. Sprinkle the crushed tortilla chips evenly over the top, then cover with the shredded Mexican-blend cheese.
- Bake: Place the casserole in the preheated oven and bake for 25 to 30 minutes, until the cheese is melted and bubbly and the chips are slightly toasted.
- Rest and serve: Remove from oven and let the casserole rest for a few minutes before serving to allow it to set slightly.
Notes
- For added freshness and crunch, top servings with shredded lettuce and diced tomatoes after baking.
- You can substitute ground turkey or chicken for a leaner option.
- Use gluten-free taco seasoning and certified gluten-free tortilla chips to maintain the gluten-free status.
- If you prefer extra spice, add jalapeños or hot sauce to the beef mixture.
