Description

A fun and crowd-pleasing Walking Taco Casserole that combines seasoned ground beef, sweet corn, black beans, crunchy tortilla chips, and melted Mexican-blend cheese, baked to bubbly perfection. This casserole captures the flavors of classic walking tacos in an easy-to-serve dish perfect for family dinners or casual gatherings.

Ingredients

Meat and Seasoning

  • 1 pound ground beef
  • 1 packet taco seasoning (about 1 oz)

Vegetables and Beans

  • 1 cup corn (fresh, frozen, or canned, drained if canned)
  • 1 cup black beans, drained and rinsed

Other Ingredients

  • 2 cups crushed tortilla chips
  • 2 cups shredded Mexican-blend cheese (cheddar, Monterey Jack, etc.)

Instructions

  1. Preheat the oven: Set your oven to 375°F (190°C) to ensure it’s ready by the time the casserole is assembled.
  2. Cook the beef: In a skillet over medium heat, brown the ground beef until fully cooked, breaking it apart with a spatula. Drain excess fat if necessary.
  3. Add seasoning and mix-ins: Stir in the taco seasoning packet along with the corn and black beans, cooking for a few more minutes until the mixture is heated through and well combined.
  4. Assemble the casserole: Transfer the beef mixture into a baking dish, spreading it evenly. Sprinkle the crushed tortilla chips evenly over the top, then cover with the shredded Mexican-blend cheese.
  5. Bake: Place the casserole in the preheated oven and bake for 25 to 30 minutes, until the cheese is melted and bubbly and the chips are slightly toasted.
  6. Rest and serve: Remove from oven and let the casserole rest for a few minutes before serving to allow it to set slightly.

Notes

  • For added freshness and crunch, top servings with shredded lettuce and diced tomatoes after baking.
  • You can substitute ground turkey or chicken for a leaner option.
  • Use gluten-free taco seasoning and certified gluten-free tortilla chips to maintain the gluten-free status.
  • If you prefer extra spice, add jalapeños or hot sauce to the beef mixture.
