Description

Soft, nutrient-packed wholesome cookies made with oats, nut butter, and natural sweeteners. These cookies are a perfect healthy snack or breakfast treat, combining wholesome ingredients like rolled oats, almond or peanut butter, and natural sweeteners such as honey or maple syrup.

Ingredients

Dry Ingredients

  • 1 cup rolled oats
  • 1 tsp cinnamon
  • Pinch of salt

Wet Ingredients

  • 1/2 cup almond butter or peanut butter
  • 1/3 cup honey or maple syrup
  • 1 mashed banana or 1/4 cup applesauce
  • 1 tsp vanilla

Add-ins

  • 1/4 cup chocolate chips or raisins

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat to prevent sticking.
  2. Mix Ingredients: In a mixing bowl, combine the rolled oats, cinnamon, and salt. Add the almond or peanut butter, honey or maple syrup, mashed banana or applesauce, vanilla extract, and stir well until the mixture is fully combined and forms a sticky dough.
  3. Add Mix-ins: Fold in the chocolate chips or raisins evenly throughout the dough to add sweetness and texture.
  4. Shape Cookies: Scoop the dough onto the prepared baking sheet using a spoon or cookie scoop, then gently flatten each cookie slightly with your fingers or the back of a spoon to help them bake evenly.
  5. Bake: Place the baking sheet in the oven and bake for 10 to 12 minutes or until the cookies are set and lightly golden around the edges.
  6. Cool: Remove the cookies from the oven and allow them to cool completely on the baking sheet before transferring to a container or serving to let them firm up.

Notes

  • For added nutrition and texture, consider adding chia seeds or ground flaxseed to the dough.
  • Use dairy-free chocolate chips to keep the recipe suitable for dairy-free diets.
  • You can substitute rolled oats with gluten-free oats to ensure the recipe is gluten-free.
  • Store cookies in an airtight container at room temperature for up to 5 days or freeze for longer storage.
