Ingredients
For the Wontons:
½ pound ground chicken
2 green onions, thinly sliced
2 cloves garlic, minced
1 teaspoon fresh ginger, minced
2 teaspoons soy sauce
1 ½ teaspoons rice vinegar
1 teaspoon cornstarch
½ teaspoon toasted sesame oil
¼ teaspoon white pepper
12-ounce package wonton wrappers
For the Soup:
10 cups unsalted chicken stock
1-inch piece of fresh ginger, thinly sliced
6 cloves of garlic, peeled, left whole
4 whole green onions
2 tablespoons soy sauce
2 teaspoons kosher salt
Pinch of white pepper
Thinly sliced green onions, to serve
Instructions
Make the Wontons:
Prepare the Filling: In a medium-sized bowl, combine the ground chicken, green onions, garlic, ginger, soy sauce, rice vinegar, cornstarch, sesame oil, and white pepper. Mix until well combined.
Assemble the Wontons: Place a wonton wrapper on a clean surface. Add about 1 teaspoon of the chicken filling to the center of the wrapper. Dip your fingertip in water and run it along the edges of the wrapper to help seal it. Fold the wrapper into a triangle, pressing out any air as you go. Create an indention at the bottom and then fold the bottom points together, securing them firmly by pressing with your fingers.
Repeat: Continue assembling the wontons until all the filling is used. Place them on a sheet pan and cover with a clean kitchen towel to prevent them from drying out.
Prepare the Soup:
Simmer the Broth: In a large pot, combine the chicken stock, ginger, garlic, green onions, soy sauce, kosher salt, and white pepper. Bring it to a boil, cover, reduce the heat to low, and simmer for about 10 minutes.
Strain the Broth: Using a handheld mesh strainer, remove and discard the solids from the broth. Keep the broth warm.
Cook the Wontons:
Boil the Wontons: Bring a large pot of water to a boil. Add the wontons to the boiling water and cook for about 4 minutes. They are done when they start to float.
Assemble the Soup: Once the wontons are cooked, remove them from the water and place them into a serving bowl. Ladle the warm broth over the wontons and top with sliced green onions.

Notes
Freezing: The wontons can be frozen for later use. Arrange them on a tray, freeze until firm, then store in a zip-lock bag for up to 3 months. When ready to cook, boil directly from frozen.
