- 4 medium potatoes
Filling
- 1/2 cup Greek yogurt
- 1/2 cup shredded cheese (cheddar or preferred type)
- 2 green onions, chopped
- Salt and pepper to taste
Instructions
- Preheat Oven: Preheat your oven to 200°C (400°F) to prepare for baking the potatoes.
- Bake Potatoes: Place whole potatoes on a baking tray and bake for 40 to 45 minutes until they are tender when pierced with a fork.
- Cool and Scoop: Allow the baked potatoes to cool slightly, then cut each potato in half lengthwise. Carefully scoop out some of the potato flesh, leaving a thin layer attached to the skin for structure.
- Prepare Filling: In a bowl, combine the scooped-out potato flesh, Greek yogurt, shredded cheese, chopped green onions, salt, and pepper. Mix thoroughly until well blended.
- Stuff Potato Skins: Spoon the filling mixture evenly back into each potato skin half.
- Bake Stuffed Skins: Return the filled potato skins to the oven and bake for an additional 10 to 15 minutes until the tops are golden and the cheese is melted.
- Serve: Serve the stuffed potato skins warm, optionally accompanied by extra Greek yogurt or your favorite sauce.

- Leave a thin layer of potato inside the skin for better structure and to hold the filling.
