Ingredients

Potatoes

  • 4 medium potatoes

Filling

  • 1/2 cup Greek yogurt
  • 1/2 cup shredded cheese (cheddar or preferred type)
  • 2 green onions, chopped
  • Salt and pepper to taste


Instructions

  1. Preheat Oven: Preheat your oven to 200°C (400°F) to prepare for baking the potatoes.
  2. Bake Potatoes: Place whole potatoes on a baking tray and bake for 40 to 45 minutes until they are tender when pierced with a fork.
  3. Cool and Scoop: Allow the baked potatoes to cool slightly, then cut each potato in half lengthwise. Carefully scoop out some of the potato flesh, leaving a thin layer attached to the skin for structure.
