Description

These soft and fluffy apple muffins are delightfully topped with a sweet cinnamon sugar crust, making them an ideal choice for a comforting breakfast or a cozy snack any time of the day.

Ingredients

Main Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 1/2 cup milk
  • 1/3 cup oil or melted butter
  • 1 egg
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 1 cup diced apples

Topping

  • 2 tbsp sugar
  • 1/2 tsp cinnamon

Instructions

  1. Preheat the Oven: Preheat your oven to 180°C (350°F) and prepare a muffin tin by lining it with paper liners or greasing it lightly to prevent sticking.
  2. Mix Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, cinnamon, and salt until well combined.
  3. Combine Wet Ingredients: In a separate large bowl, beat the sugar and egg together until smooth. Add the milk, oil (or melted butter), and vanilla extract, and whisk until fully incorporated.
  4. Combine Wet and Dry: Gradually add the dry ingredients into the wet ingredients bowl, stirring gently until just combined to avoid overmixing which can make muffins tough.
  5. Fold in Apples: Gently fold the diced apples into the batter, ensuring they are evenly distributed without crushing them.
  6. Fill Muffin Tin: Spoon the batter evenly into the muffin cups, filling them about 3/4 full to allow room for rising.
  7. Apply Cinnamon Sugar Topping: Mix the 2 tablespoons of sugar with 1/2 teaspoon of cinnamon and sprinkle this mixture evenly over the tops of the muffin batter in each cup for a sweet, crunchy crust.
  8. Bake: Place the muffin tin in the preheated oven and bake for 18 to 22 minutes or until a toothpick inserted into the center of a muffin comes out clean and the tops are golden brown.
  9. Cool and Serve: Remove the muffins from the oven and allow them to cool in the tin for about 5 minutes before transferring to a wire rack to cool completely. Serve warm or at room temperature.

Notes

  • Use tart apples like Granny Smith for a balanced sweet-tart flavor that complements the cinnamon.
  • For added texture and flavor, consider adding 1/2 cup chopped nuts or raisins to the batter.
  • Ensure not to overmix the batter to keep muffins tender and soft.
  • These muffins are best enjoyed fresh but can be stored in an airtight container for up to 3 days.
