Description

Creamy baked feta combined with juicy tomatoes and perfectly cooked eggs creates a simple yet flavorful breakfast or brunch dish that’s easy to prepare and packed with Mediterranean flavors.

Ingredients

Cheese

  • 1 block (8 oz) feta cheese

Vegetables

  • 2 cups cherry tomatoes
  • 1 red bell pepper, diced

Seasonings & Oil

  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • ½ tsp red pepper flakes
  • Salt and black pepper, to taste

Eggs & Garnish

  • 4 large eggs
  • Fresh basil or parsley, for garnish

Instructions

  1. Preheat oven: Preheat your oven to 400°F (200°C) to ensure it reaches the right temperature while you prepare the ingredients.
  2. Arrange feta and vegetables: Place the block of feta cheese in the center of a baking dish. Surround it evenly with the cherry tomatoes and diced red bell pepper to create a colorful and flavorful base.
  3. Season and oil: Drizzle the olive oil over the feta and vegetables. Sprinkle the dried oregano, red pepper flakes, salt, and black pepper evenly over the mixture to infuse it with Mediterranean spices.
  4. Bake initial mixture: Put the dish into the preheated oven and bake for 25 minutes, or until the tomatoes soften and the feta becomes creamy and slightly golden on top.
  5. Stir gently: Remove the baking dish from the oven. Using a spoon, gently stir the mixture to combine the softened tomatoes and creamy feta, ensuring flavors meld.
  6. Add eggs: Carefully create four small wells in the mixture, then crack one egg into each well, being careful not to break the yolks.
  7. Final bake: Return the dish to the oven and bake for an additional 8–10 minutes, or until the egg whites are set and the yolks reach your preferred level of doneness.
  8. Garnish and serve: Remove from the oven and garnish with fresh basil or parsley. Serve immediately, optionally with crusty bread or pita for dipping.

Notes

  • Serve with crusty bread or pita for dipping to soak up the creamy feta and runny eggs.
  • Add spinach or kale before the initial bake to incorporate extra greens and nutrients.
  • Adjust the amount of red pepper flakes based on your desired level of heat.
