Description

Fluffy, bite-sized banana pancake balls made from ripe bananas, perfect for a quick breakfast, a fun snack, or packing into kids’ lunchboxes for an easy, tasty treat.

Ingredients

Wet Ingredients

  • 1 ripe banana (mashed)
  • 3/4 cup milk
  • 1 egg
  • 1 tsp vanilla extract
  • 1 tbsp melted butter or oil

Dry Ingredients

  • 1 cup all-purpose flour
  • 1 tbsp sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon (optional)
  • 1/4 tsp salt

Instructions

  1. Mash the Banana: In a bowl, mash the ripe banana until it becomes smooth and free of large lumps.
  2. Mix Wet Ingredients: Add the egg, milk, vanilla extract, and melted butter or oil to the mashed banana and mix well to combine.
  3. Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, sugar, baking powder, baking soda, salt, and cinnamon (if using).
  4. Combine Wet and Dry Mixtures: Add the dry ingredients to the wet ingredients and gently stir until just combined. Avoid overmixing to keep the pancakes fluffy.
  5. Heat Your Cooking Surface: Lightly grease a non-stick pan or a mini muffin pan if you choose to bake. Preheat it over medium heat if using the stovetop.
  6. Cook the Pancake Bites: Spoon small amounts of batter onto the pan to form bite-sized pancakes. Cook until bubbles appear on the surface and edges start to set, then flip carefully and cook until the other side turns golden brown.
  7. Serve Warm: Remove from heat and serve your banana pancake bites warm with syrup, honey, or yogurt, or enjoy them plain.

Notes

  • Add chocolate chips or blueberries into the batter for a fun variation.
  • Serve with maple syrup, honey, or yogurt for dipping to enhance flavors.
  • Use a mini muffin pan and bake at 350°F (175°C) for 10-12 minutes as an alternative cooking method.
  • Make sure not to overmix the batter to keep the pancakes tender and fluffy.
