Description

Tender baked sweet potatoes loaded with juicy BBQ chicken, melted cheddar cheese, and fresh toppings like red onion, green onions, and cilantro. This easy and satisfying meal combines smoky, tangy flavors with the natural sweetness of potatoes for a delicious, wholesome dinner or lunch option.

Ingredients

Sweet Potatoes

  • 4 medium sweet potatoes
  • 1 tbsp olive oil
  • Salt and black pepper to taste

BBQ Chicken Filling

  • 2 cups cooked shredded chicken
  • 1/2 cup BBQ sauce

Toppings

  • 1/2 cup shredded cheddar cheese
  • 1/4 red onion, finely diced
  • 2 green onions, sliced
  • 2 tbsp fresh cilantro, chopped

Instructions

  1. Preheat and Prepare Potatoes: Preheat your oven to 200°C (about 400°F). Wash and dry the sweet potatoes thoroughly. Pierce each sweet potato several times with a fork to allow steam to escape during baking.
  2. Season the Potatoes: Rub each sweet potato with olive oil, then sprinkle evenly with salt and black pepper to taste. This helps achieve a flavorful, crispy skin when baked.
  3. Bake Sweet Potatoes: Place the prepared sweet potatoes on a baking sheet and bake in the preheated oven for 45 to 60 minutes, or until they are completely tender when pierced with a fork.
  4. Prepare BBQ Chicken: While the sweet potatoes are baking, combine the shredded cooked chicken with the BBQ sauce in a skillet. Warm over medium heat until heated through, stirring occasionally to mix flavors well.
  5. Stuff the Potatoes: Once the sweet potatoes are done baking, remove them from the oven and slice each one lengthwise. Gently open each potato without breaking it apart.
  6. Add Filling and Cheese: Spoon the warm BBQ chicken mixture into each opened sweet potato. Sprinkle the shredded cheddar cheese evenly over the chicken-filled potatoes.
  7. Melt the Cheese: Return the stuffed sweet potatoes to the oven for an additional 3–5 minutes, just long enough for the cheese to melt melted and become bubbly.
  8. Top and Serve: Remove the sweet potatoes from the oven and top each with finely diced red onion, sliced green onions, and chopped fresh cilantro. Serve warm for a comforting and flavorful meal.

Notes

  • Rotisserie chicken works well for this recipe and saves time.
  • For a creamy topping, add a dollop of sour cream or Greek yogurt.
  • Feel free to use your favorite BBQ sauce to adjust the flavor profile to sweeter or spicier preferences.
