Description

Beef Fried Rice is a quick and satisfying meal featuring tender strips of beef, mixed vegetables, scrambled eggs, and chilled long-grain rice tossed in a savory blend of soy sauce, oyster sauce, and sesame oil. This dish is perfect for repurposing leftover rice and can be prepared in under 30 minutes, making it a perfect weeknight dinner option with a delicious Chinese-inspired flavor.

Ingredients

Beef

  • 1 pound flank steak or sirloin, thinly sliced
  • ¼ teaspoon black pepper
  • Salt, as needed

Rice and Vegetables

  • 3 cups cooked and chilled long-grain rice
  • 1 cup frozen peas and carrots
  • 3 green onions, sliced
  • 3 cloves garlic, minced
  • 1 teaspoon grated fresh ginger

Eggs and Sauces

  • 2 large eggs, lightly beaten
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon toasted sesame oil

Oils

  • 2 tablespoons avocado oil or vegetable oil, divided

Instructions

  1. Prepare the Beef: Pat the sliced beef dry with paper towels and season lightly with black pepper to enhance its flavor while cooking.
  2. Cook the Beef: Heat 1 tablespoon of avocado or vegetable oil in a large skillet or wok over high heat. Add the beef slices and stir occasionally, cooking for 2–3 minutes until browned but still tender. Remove the beef from the skillet and transfer to a plate.
  3. Scramble the Eggs: Add the remaining tablespoon of oil to the skillet. Pour in the beaten eggs and gently scramble them until they are just cooked through but still soft. Remove the eggs from the skillet and set aside with the beef.
  4. Sauté Vegetables and Aromatics: In the same skillet, add the peas, carrots, minced garlic, and grated fresh ginger. Stir-fry the mixture for 1–2 minutes until the vegetables are tender and fragrant.
  5. Add the Rice: Add the chilled, cooked rice to the skillet, breaking apart any clumps with a spatula to ensure even cooking. Stir-fry the rice for 3–4 minutes until heated through and lightly toasted.
  6. Combine Ingredients: Return the cooked beef and scrambled eggs to the skillet with the rice and vegetables. Stir to combine all components evenly.
  7. Season the Fried Rice: Pour the low-sodium soy sauce, oyster sauce, and toasted sesame oil over the mixture. Toss everything thoroughly to coat the beef, rice, and vegetables evenly with the savory sauce.
  8. Finish and Serve: Stir in the sliced green onions for a fresh pop of flavor. Serve the beef fried rice immediately while hot for the best experience.

Notes

  • Use chilled, day-old rice for the best texture to avoid mushy fried rice.
  • Slice the beef against the grain to ensure the meat is tender and easy to chew.
  • Feel free to add other vegetables such as mushrooms, bell peppers, corn, or broccoli for extra nutrition and flavor.
  • Store any leftovers in an airtight container in the refrigerator for up to 3 days to maintain freshness.
