Ingredients
Beef and Seasoning
- 1 lb ground beef
- 1 packet taco seasoning
- 1/4 cup water
- 1 tbsp olive oil
Salad
- 6 cups chopped romaine lettuce
- 1 cup cherry tomatoes, halved
- 1/2 cup shredded cheddar cheese
- 1/2 cup black beans, drained and rinsed
- 1/2 cup corn, drained
- 1 avocado, diced
- 1/4 cup red onion, diced
Toppings and Garnishes
- 1/2 cup crushed tortilla chips
- 1/3 cup salsa
- 1/3 cup sour cream
- Fresh cilantro, for garnish
- Lime wedges, for serving
Instructions
- Heat Oil and Cook Beef: Heat the olive oil in a large skillet over medium-high heat. Add the ground beef and cook for 5 to 7 minutes, breaking it apart with a spoon, until browned and fully cooked. Drain any excess grease if necessary.
- Add Seasoning: Stir in the taco seasoning and water. Simmer for 2 to 3 minutes, stirring occasionally, until the beef is evenly coated and the sauce thickens slightly.
- Prepare Salad Base: In a large bowl, combine the chopped romaine lettuce, halved cherry tomatoes, black beans, corn, diced avocado, diced red onion, and shredded cheddar cheese. Mix gently to distribute ingredients evenly.
- Toss Beef with Salad: Add the warm, seasoned ground beef to the salad mixture and gently toss together to combine all the flavors and textures.
- Add Toppings: Sprinkle crushed tortilla chips over the top of the salad. Dollop salsa and sour cream evenly across the salad for added flavor and creaminess.
- Garnish and Serve: Garnish with fresh cilantro leaves and serve the salad with lime wedges on the side for an extra burst of citrus brightness.
Notes
- Add sliced jalapeños or hot salsa if you prefer extra heat in your salad.
- You can substitute ground turkey or chicken instead of beef for a leaner protein option.
- For additional flavor and variety, add toppings such as sliced olives, bell peppers, or pickled onions.
- To keep the tortilla chips crunchy, add them just before serving.
