Ingredients
Beef Tenderloin Tips
- 700 g beef tenderloin tips, cut into bite-sized pieces
- 2 tbsp olive oil
- 2 tbsp butter
- 3 garlic cloves, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp smoked paprika
Zip Sauce
- 4 tbsp butter
- 1 tbsp Worcestershire sauce
- 1 tbsp Dijon mustard
- 1 tsp lemon juice
- 1/2 tsp garlic powder
- 1/2 tsp dried parsley
- 1/4 tsp cayenne pepper
- Black pepper to taste
Instructions
- Prepare the Beef: Pat the beef tenderloin tips dry thoroughly using paper towels to ensure a good sear. Season the beef evenly with salt, black pepper, and smoked paprika.
- Heat the Skillet: Place a large skillet over high heat and add the olive oil, allowing it to get hot but not smoking to create the perfect searing environment.
- Sear the Beef: Arrange the beef tips in a single layer in the hot skillet, avoiding overcrowding to prevent steaming. Sear each side for 2–3 minutes until a golden crust forms.
- Add Butter and Garlic: In the final minute of cooking, add butter and minced garlic to the skillet. Stir gently to coat the beef tips and infuse them with rich, aromatic flavor.
- Rest the Beef: Remove the beef tips from the skillet and transfer them to a plate to rest, keeping them juicy and tender.
- Make the Zip Sauce: Turn the heat to low and add the butter, Worcestershire sauce, Dijon mustard, lemon juice, garlic powder, dried parsley, cayenne pepper, and black pepper to the same skillet. Stir continuously until the butter melts and the sauce becomes smooth and well blended.
- Combine and Serve: Return the rested beef tips to the skillet and toss to coat evenly with the zip sauce. Serve immediately for best flavor, pairing with mashed potatoes, roasted vegetables, or rice as desired.
Notes
- Avoid overcrowding the skillet to ensure the beef sears properly instead of steaming.
- Do not overcook the beef to keep it tender and juicy.
- Optional: Add mushrooms or onions to the skillet for extra flavor and texture.
- Serve with your favorite sides like mashed potatoes, roasted vegetables, or steamed rice for a complete meal.
