Description

Bisquick Chocolate Chip Muffins are soft, fluffy, and loaded with sweet chocolate chips. Made with simple pantry ingredients and Bisquick mix, these easy muffins are perfect for breakfast, brunch, or a quick afternoon treat.

Ingredients

Dry Ingredients

  • 2 cups Bisquick baking mix
  • 1/2 cup granulated sugar
  • 3/4 cup semi-sweet chocolate chips
  • 2 tbsp brown sugar (optional)

Wet Ingredients

  • 1/2 cup milk
  • 1/3 cup vegetable oil
  • 1 large egg
  • 1 tsp vanilla extract

Instructions

  1. Preheat Oven: Preheat the oven to 400°F (200°C). Line a 12-cup muffin pan with paper liners or lightly grease it to prevent sticking.
  2. Mix Dry Ingredients: In a large bowl, whisk together the Bisquick mix and granulated sugar until well combined.
  3. Combine Wet Ingredients: In a separate bowl, whisk the milk, vegetable oil, egg, and vanilla extract thoroughly until smooth.
  4. Combine Wet and Dry: Pour the wet mixture into the dry ingredients and stir gently with a spatula just until combined. Avoid overmixing to keep the muffins tender.
  5. Add Chocolate Chips: Fold in the semi-sweet chocolate chips evenly through the batter.
  6. Fill Muffin Cups: Divide the batter evenly among the prepared muffin cups, filling each about two-thirds to three-quarters full.
  7. Optional Topping: Sprinkle brown sugar on top of each muffin if desired for a crunchy sweet crust.
  8. Bake: Bake in the preheated oven for 15 to 18 minutes, or until muffins are golden brown and a toothpick inserted into the center comes out clean.
  9. Cool: Let the muffins cool for 5 minutes in the pan, then transfer to a wire rack to cool completely or serve warm.

Notes

  • Do not overmix the batter as it can lead to dense muffins.
  • You can use milk or semi-sweet chocolate chips based on your preference.
  • Add a pinch of cinnamon to the batter to enhance flavor if desired.
  • Store muffins in an airtight container at room temperature for up to 3 days to maintain freshness.
