Description
Blackberry Lime Icebox Pie is a refreshing no-bake dessert featuring a creamy lime filling swirled with sweet blackberries in a buttery graham cracker crust. This chilled pie is perfect for summertime gatherings or whenever you want a light, tangy, and sweet treat without turning on the oven.
Ingredients
Crust
- 2 cups graham cracker crumbs
- ½ cup unsalted butter, melted
Filling
- 1 can (14 oz) sweetened condensed milk
- ½ cup fresh lime juice
- 1 tablespoon lime zest
- 8 oz (225 g) cream cheese, softened
- 1 container (8 oz) whipped topping, thawed
- 1 cup blackberry preserves or blackberry puree
Instructions
- Prepare the crust: In a mixing bowl, combine the graham cracker crumbs and melted unsalted butter until the mixture resembles wet sand. Press this mixture evenly into the bottom and up the sides of a 9-inch pie dish. Refrigerate the crust for 15 minutes to set firmly.
- Make the filling base: In a large bowl, beat the softened cream cheese until smooth and creamy using a hand mixer or stand mixer on medium speed.
- Add wet ingredients: Gradually mix in the sweetened condensed milk, fresh lime juice, and lime zest with the cream cheese until fully combined and smooth.
- Fold in whipped topping: Gently fold the thawed whipped topping into the lime mixture with a spatula to keep it light and airy without deflating it.
- Layer and swirl filling: Spread half of the filling into the prepared graham cracker crust. Spoon half of the blackberry preserves evenly over the filling and use a knife or skewer to gently swirl the preserves into the filling for a marbled effect.
- Finish the pie: Add the remaining filling on top, spreading it smoothly. Spoon the remaining blackberry preserves over the top and swirl again to create a decorative pattern.
- Chill the pie: Refrigerate the assembled pie for at least 4 hours before serving to allow it to set properly. For best results, chill overnight.
Notes
- Garnish with fresh blackberries and lime slices before serving for an elegant presentation.
- Chill the pie overnight to achieve the best texture and flavor melding.
- Use fresh lime juice and zest for the best tartness and aroma.
- If you prefer, substitute blackberry preserves with fresh blackberries blended into a puree.
