Ingredients
Soup Base
- 1 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 4 cups fresh or frozen peas
- 4 cups vegetable broth
Finishing Touches
- 1/4 cup heavy cream or coconut cream
- 2 tbsp fresh mint leaves
- Salt and black pepper to taste
Instructions
- Heat the Oil: Heat olive oil in a large pot over medium heat until shimmering.
- Sauté Onion: Add the diced onion and cook, stirring frequently, until softened and translucent, about 5 minutes.
- Add Garlic: Stir in the minced garlic and cook just until fragrant, about 30 seconds, taking care not to burn it.
- Add Peas and Broth: Pour in the peas and vegetable broth, then bring the mixture to a boil over high heat.
- Simmer Soup: Reduce heat to low and let it simmer gently for 10 minutes, allowing the flavors to meld and the peas to become tender.
- Add Mint: Stir in the fresh mint leaves to infuse the soup with a refreshing herbal aroma.
- Blend Soup: Using an immersion blender directly in the pot or transferring in batches to a standard blender, blend until completely smooth and creamy.
- Finish with Cream: Return the blended soup to the pot if needed and stir in your choice of heavy cream or coconut cream for richness.
- Season: Taste and season with salt and freshly ground black pepper according to your preference.
- Serve Warm: Ladle the soup into bowls and serve immediately, garnished optionally with pea shoots or extra mint leaves.
Notes
- Fresh mint really enhances the natural sweetness of the peas and adds a bright note to the soup.
- For a vegan version, substitute heavy cream with coconut cream without compromising the creamy texture.
- Garnish with pea shoots or additional fresh mint leaves for an attractive presentation and added freshness.
