Ingredients
Chicken and Vegetables
- 1½ lbs boneless, skinless chicken breasts, cut into bite-sized pieces
- 3 cups broccoli florets
- 1 small yellow onion, diced
- 2 cloves garlic, minced
Rice and Dairy
- 3 cups cooked white or brown rice
- 1 can (10.5 oz) cream of chicken soup
- ½ cup chicken broth
- ½ cup sour cream or Greek yogurt
- 1½ cups shredded sharp cheddar cheese, divided
Seasonings and Toppings
- 2 tbsp olive oil
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp paprika
- ½ tsp salt
- ¼ tsp black pepper
- ¼ cup breadcrumbs, optional
- 2 tbsp fresh parsley, chopped
Instructions
- Preheat and Prepare: Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish to prevent sticking and set aside.
- Cook Chicken: Heat olive oil in a large skillet over medium-high heat. Add the bite-sized chicken pieces and season them with garlic powder, onion powder, paprika, salt, and pepper. Cook for 5–7 minutes, stirring occasionally until the chicken is browned and almost cooked through.
- Sauté Onion and Garlic: Add the diced onion to the skillet with the chicken and cook for an additional 2–3 minutes until the onion softens. Stir in the minced garlic and cook for about 30 seconds to release its fragrance.
- Mix the Casserole Base: In a large mixing bowl, combine the cooked rice, broccoli florets, cream of chicken soup, chicken broth, sour cream (or Greek yogurt), and 1 cup of shredded sharp cheddar cheese. Stir well to integrate all ingredients evenly.
- Combine Chicken Mixture: Add the cooked chicken, onion, and garlic mixture to the bowl. Mix thoroughly so all components are well distributed in the casserole mixture.
- Assemble the Casserole: Transfer the combined mixture into the prepared baking dish, spreading it out evenly. Sprinkle the remaining ½ cup of cheddar cheese over the top. If using, add breadcrumbs for an extra crunchy topping.
- Bake Covered: Cover the baking dish with aluminum foil and bake for 20 minutes. This step allows the casserole to heat through and the flavors to meld together.
- Bake Uncovered: Remove the foil and continue baking for an additional 10–15 minutes. Bake until the casserole is hot, bubbly, and the top is golden and slightly crispy.
- Rest and Garnish: Let the casserole rest for 5 minutes once out of the oven. Finally, garnish with chopped fresh parsley before serving to add a fresh, herby note.
Notes
- Use rotisserie chicken to shorten prep time for an even quicker meal.
- Both fresh and frozen broccoli work well; if using frozen, thaw and drain thoroughly to avoid excess moisture.
- Sharp cheddar cheese delivers the best flavor, but Monterey Jack or a cheddar blend can be substituted based on preference.
- For added texture, sprinkle toasted breadcrumbs or crushed crackers on top before baking.
- Store leftover casserole in the refrigerator and consume within 3 days for the best freshness.
