Ingredients

Chicken

  • 4 boneless skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp paprika
  • Salt and pepper to taste

Filling

  • 1½ cups broccoli florets, finely chopped
  • 1 cup shredded cheddar cheese
  • 4 oz cream cheese, softened
  • 1 tsp garlic powder


Instructions

  1. Preheat the oven. Preheat your oven to 375°F (190°C) to prepare for baking the stuffed chicken.
  2. Prepare the filling. In a medium bowl, mix the finely chopped broccoli florets, shredded cheddar cheese, softened cream cheese, and garlic powder until well combined.
  3. Prepare chicken breasts. Using a sharp knife, carefully cut a pocket into the side of each chicken breast without slicing all the way through to create a cavity for the filling.
  4. Stuff the chicken. Spoon the broccoli and cheese filling into each chicken breast pocket, ensuring an even distribution. Secure the opening with toothpicks if needed to keep the filling inside during baking.
  5. Season the chicken. Brush the outside of each stuffed chicken breast with olive oil and season generously with paprika, salt, and pepper to enhance flavor and encourage browning.
  6. Arrange for baking. Place the stuffed chicken breasts into a greased baking dish, ensuring they are spaced apart for even cooking.
  7. Bake the chicken. Bake in the preheated oven for 30–35 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) to ensure doneness and food safety.
  8. Rest and serve. Remove the chicken from the oven and let it rest for 5 minutes. This allows the juices to redistribute, resulting in tender and juicy chicken. Remove toothpicks before serving.
