Description

A creamy and comforting Italian-inspired pasta dish featuring tender sautéed chicken, fresh broccoli florets, and fettuccine pasta all tossed in a rich and silky homemade Alfredo sauce made from butter, garlic, heavy cream, and Parmesan cheese.

Ingredients

Protein & Vegetables

  • 2 chicken breasts, sliced
  • 2 cups broccoli florets

Pasta

  • 250 g fettuccine pasta

Sauce

  • 1 cup heavy cream
  • 1/2 cup Parmesan cheese, grated
  • 3 cloves garlic, minced
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. Cook Pasta and Broccoli: Bring a large pot of salted water to a boil. Add the fettuccine pasta and broccoli florets together and cook until the pasta is al dente and the broccoli is tender yet firm, about 8-10 minutes. Drain and set aside.
  2. Cook Chicken: In a large skillet over medium heat, add a bit of oil or butter and cook the sliced chicken breasts until they are golden brown on the outside and cooked through, about 5-7 minutes. Remove from skillet and set aside.
  3. Melt Butter and Sauté Garlic: To the same skillet, add butter and let it melt. Add the minced garlic and sauté until fragrant and lightly golden, about 1-2 minutes, taking care not to burn it.
  4. Make Alfredo Sauce: Pour the heavy cream into the skillet with the garlic and butter. Bring to a gentle simmer while stirring constantly. Add the grated Parmesan cheese and stir until the cheese melts completely and the sauce is smooth and creamy. Season with salt and pepper to taste.
  5. Combine Ingredients: Return the cooked chicken to the skillet with the Alfredo sauce. Then add the drained pasta and broccoli. Toss gently but thoroughly to coat everything evenly with the sauce and heat through, about 2-3 minutes.
  6. Serve: Serve the broccoli chicken Alfredo immediately while hot for the best creamy texture and flavor.

Notes

  • Steaming broccoli separately before adding can give it a firmer texture if preferred.
  • Adding sliced mushrooms during the garlic sauté step adds extra depth of flavor.
  • This dish is best served immediately to enjoy the creamy Alfredo sauce at its freshest.
