Instructions

  1. Preheat Oven: Preheat your oven to 200°C (400°F) to ensure it is hot and ready for baking the potatoes to a crispy perfection.
  2. Prepare Potatoes: Carefully slice the potatoes thinly crosswise, making sure not to cut all the way through to the bottom. Place chopsticks or wooden spoons on either side of each potato to act as a stop and prevent slicing through completely.
  3. Make Brown Butter: Melt the butter in a pan over medium heat, swirling occasionally, until it turns a golden brown color and develops a nutty aroma. Remove from heat promptly to avoid burning.
  4. Brush Potatoes: Generously brush each sliced potato with the brown butter, making sure the butter seeps into the slices. Season all over with salt and black pepper for balanced flavor.
  5. Bake Potatoes: Place the potatoes on a baking tray and bake in the preheated oven for 40–50 minutes, basting occasionally with more brown butter if desired, until the potatoes are tender inside and crisp on the edges.
  6. Caramelize Onions: While the potatoes bake, heat olive oil in a pan over low-medium heat. Add the thinly sliced onions and cook slowly, stirring often, until they become golden brown and sweetly caramelized, about 20–30 minutes.
