Ingredients
For the Chicken Shawarma
- 600 g boneless, skinless chicken thighs
- 2 tbsp olive oil
- 1 tsp ground cumin
- 1 tsp paprika
- 1 tsp ground coriander
- 1/2 tsp turmeric
- 1/2 tsp garlic powder
- 1/2 tsp cinnamon
- Salt and black pepper, to taste
For the Bowl
- 3 cups cooked basmati rice
- 1 cucumber, diced
- 2 tomatoes, diced
- 1/2 red onion, thinly sliced
- 1/2 cup hummus
- 1/4 cup fresh parsley, chopped
For the Garlic Yogurt Sauce
- 1 cup Greek yogurt
- 1 garlic clove, minced
- 1 tbsp lemon juice
- 1 tbsp tahini
- Salt, to taste
Instructions
- Prepare the Chicken: Cut the chicken thighs into bite-sized pieces to ensure even cooking and easy eating.
- Make the Spice Mix: In a bowl, combine the olive oil, ground cumin, paprika, ground coriander, turmeric, garlic powder, cinnamon, salt, and black pepper to create the flavorful marinade.
- Marinate the Chicken: Toss the chicken pieces thoroughly in the spice mixture and let them marinate for at least 20 minutes to absorb all the spices and enhance flavor.
- Cook the Chicken: Heat a large skillet over medium-high heat. Add the marinated chicken and cook for 8–10 minutes, stirring occasionally, until the chicken is browned and fully cooked through.
- Prepare the Garlic Yogurt Sauce: In a small bowl, mix the Greek yogurt, minced garlic, lemon juice, tahini, and salt until smooth and well combined.
- Assemble the Bowls: Divide the cooked basmati rice evenly among four serving bowls. Top each bowl with the cooked chicken, diced cucumber, diced tomatoes, thinly sliced red onion, a dollop of hummus, and sprinkle with fresh parsley.
- Serve: Drizzle the garlic yogurt sauce over the assembled bowls just before serving to add a creamy and tangy finish to the dish.
Notes
- Chicken thighs provide the juiciest and most flavorful result, but chicken breast can be used as a leaner alternative.
- For extra toppings, consider adding pickled turnips, olives, or shredded lettuce to enhance texture and flavor.
- Serve all components separately if you want to offer a build-your-own bowl experience for customizable meals.
