This Cabbage and Onion Fat-Burning Soup is a light, vegetable-packed, low-calorie dish that’s both flavorful and filling. Ideal for meal prep and healthy eating plans, this comforting soup is made with simple ingredients and simmered to perfect tenderness, making it a delicious option for warming up any day.

Ingredients

Vegetables

  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups green cabbage, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 bell pepper, diced

Liquids and Canned Goods

  • 1 (14.5 oz) can diced tomatoes
  • 6 cups vegetable broth

Seasonings and Oils

  • 1 tbsp olive oil
  • 1 tsp Italian seasoning
  • ½ tsp paprika
  • Salt and black pepper, to taste

Garnish

  • Fresh parsley, for garnish

Instructions

  1. Heat Oil: Heat 1 tablespoon of olive oil in a large soup pot over medium heat to prepare the base for sautéing the vegetables.
  2. Sauté Onions: Add the diced onion to the pot and cook for 4 to 5 minutes until the onion softens and becomes translucent, bringing out its sweetness.
  3. Add Garlic: Stir in the minced garlic and cook for 30 seconds to release its aroma without burning it.
  4. Add Vegetables: Add the chopped cabbage, sliced carrots, celery, and diced bell pepper to the pot, stirring to combine all vegetables evenly.
  5. Cook Vegetables: Cook the vegetables for about 5 minutes, stirring occasionally to soften them slightly and meld flavors.
  6. Add Liquids and Seasonings: Pour in the canned diced tomatoes with their juices and the 6 cups of vegetable broth. Add 1 teaspoon Italian seasoning, ½ teaspoon paprika, and season with salt and black pepper to taste.
  7. Simmer: Bring the soup to a boil, then reduce the heat to low and let it simmer gently for 25 to 30 minutes until all vegetables are tender and flavors have blended thoroughly.
  8. Serve: Remove from heat, garnish with fresh parsley, and serve the soup hot for a comforting meal.
