These Caribbean Jerk Shrimp Bowls are packed with bold island flavors, featuring juicy seasoned shrimp, fluffy rice, sweet mango, creamy avocado, and fresh vegetables. Topped with a zesty lime dressing, this colorful and satisfying meal brings a vibrant taste of the Caribbean to your table.

Ingredients

For the Jerk Shrimp:

  • 1 pound large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 tablespoon jerk seasoning
  • 1 teaspoon honey
  • 1 tablespoon lime juice
  • 1 garlic clove, minced
  • Salt, to taste

For the Bowls:

  • 3 cups cooked white or brown rice
  • 1 mango, diced
  • 1 avocado, sliced
  • 1 cup black beans, drained and rinsed
  • 1 cup shredded red cabbage
  • 1/2 cup diced cucumber
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup chopped fresh cilantro
  • Lime wedges, for serving

For the Lime Dressing:

  • 2 tablespoons olive oil
  • 1 tablespoon fresh lime juice
  • 1 teaspoon honey
  • 1/2 teaspoon jerk seasoning
  • Salt and black pepper, to taste

Instructions

  1. Marinate the Shrimp: In a bowl, combine the shrimp, olive oil, jerk seasoning, honey, lime juice, minced garlic, and salt. Toss until the shrimp are evenly coated with the marinade, then let them sit for 10–15 minutes to absorb the flavors.
  2. Cook the Shrimp: Heat a large skillet or grill pan over medium-high heat. Place the marinated shrimp on the pan and cook for 2–3 minutes on each side, or until the shrimp are pink, opaque, and cooked through.
  3. Prepare the Dressing: While the shrimp cooks, whisk together olive oil, fresh lime juice, honey, jerk seasoning, salt, and black pepper in a small bowl until well combined to create a zesty lime dressing.
  4. Assemble the Bowls: Divide the cooked rice evenly between four bowls. Arrange the cooked jerk shrimp on top along with diced mango, sliced avocado, black beans, shredded red cabbage, diced cucumber, and thinly sliced red onion to create a colorful presentation.
  5. Add Dressing and Garnish: Drizzle each bowl generously with the lime dressing. Finish by sprinkling chopped fresh cilantro over the top and serving with lime wedges on the side for added freshness.

Notes

  • Adjust the amount of jerk seasoning according to your preferred spice level.
  • Use cauliflower rice for a lower-carb option.
  • Pineapple can be substituted for mango for a different tropical twist.
  • Add grilled corn or plantains for an extra Caribbean-inspired touch and texture.
