Description

A traditional Teochew rice porridge featuring delicate shrimp, known for its light texture and clean, comforting taste. Cooked slowly in a clay pot, it highlights the natural sweetness of seafood in a soothing, warm bowl perfect for any time of day.

Ingredients

Main Ingredients

  • 1 cup rice
  • 9 cups water
  • 200 g shrimp, peeled and deveined
  • 2 slices ginger

Seasonings & Garnish

  • 1 tablespoon fish sauce
  • Salt to taste
  • White pepper to taste
  • Fresh cilantro leaves, chopped
  • Green onions, thinly sliced

Instructions

  1. Prepare the rice and water: Wash the rice thoroughly under cold water until the water runs clear. Add the washed rice to a clay pot along with 9 cups of water to begin cooking the base for the congee.
  2. Simmer the porridge: Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low and let it simmer gently, uncovered, for 45 to 50 minutes. Stir occasionally to prevent the rice from sticking to the bottom, and add hot water if the consistency becomes too thick to maintain a smooth porridge texture.
  3. Add ginger and shrimp: Add the two slices of ginger to the simmering porridge. Then, add the peeled shrimp and continue cooking until the shrimp turn a bright pink color, indicating they are fully cooked. This usually takes about 3-5 minutes.
  4. Season the porridge: Stir in 1 tablespoon of fish sauce, salt to taste, and white pepper. Adjust seasoning carefully to balance the light and clean flavors characteristic of Teochew style.
  5. Garnish and serve: Remove the ginger slices from the pot. Ladle the congee into bowls and garnish each serving with freshly chopped cilantro and sliced green onions for a fresh herbal aroma and flavor.

Notes

  • Teochew congee is typically thinner and lighter than Cantonese congee, so maintain a soupy consistency by adding water during cooking if needed.
  • Use fresh shrimp for the best flavor and texture; frozen shrimp can be used but may alter the texture slightly.
  • This congee is naturally gluten-free, making it suitable for those with gluten intolerance.
  • Adjust salt and fish sauce levels carefully to avoid overpowering the delicate seafood flavor.
  • The slow simmer in a clay pot helps extract flavors gently, but if you don’t have a clay pot, a heavy-bottomed saucepan will suffice.
