Ingredients
For the Crust
- 2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
For the Filling
- 16 oz cream cheese, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup sour cream
- 2 tbsp all-purpose flour
- 1 tbsp lemon juice
Instructions
- Preheat and Prepare Pan: Preheat the oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper to prevent sticking and for easy removal of bars.
- Make the Crust: In a bowl, combine the graham cracker crumbs, 1/4 cup sugar, and melted butter. Press this mixture firmly and evenly into the bottom of the prepared pan to form the crust base.
- Bake the Crust: Bake the crust for 8–10 minutes until it is set and slightly golden. Remove from the oven and let it cool slightly while you prepare the filling.
- Prepare the Filling: In a large bowl, beat the softened cream cheese and 3/4 cup granulated sugar together until smooth and creamy, ensuring no lumps remain.
- Add Eggs: Add the eggs one at a time, mixing just until incorporated after each addition to avoid overbeating.
- Mix Remaining Ingredients: Add the vanilla extract, sour cream, flour, and lemon juice, mixing gently until smooth. Avoid overmixing to keep the filling light and creamy.
- Combine and Bake: Pour the cheesecake filling over the baked crust and spread it evenly with a spatula. Bake for 30–35 minutes, or until the center is almost set but still slightly jiggles when gently shaken.
- Cool and Chill: Allow the cheesecake to cool completely at room temperature, then refrigerate for at least 3 hours to firm up before slicing.
- Serve: Cut into bars and serve chilled. Optionally, top with fresh berries, fruit sauce, or whipped cream for extra flavor.
