Description

Chicken and Sweet Potato Meal Prep is a healthy, protein-packed dish featuring tender roasted chicken breasts paired with roasted sweet potatoes and broccoli. This balanced meal is seasoned with paprika, garlic powder, and simple spices, making it perfect for meal prepping and enjoying throughout the week.

Ingredients

Chicken

  • 2 chicken breasts
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon paprika (for chicken)

Vegetables

  • 2 medium sweet potatoes, cubed
  • 1 cup broccoli florets
  • 2 tablespoons olive oil
  • 1 teaspoon paprika (for vegetables)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to ensure it reaches the right temperature for roasting both the chicken and vegetables evenly.
  2. Season Vegetables: In a large bowl, toss the cubed sweet potatoes and broccoli florets with olive oil, paprika, garlic powder, salt, and black pepper until everything is evenly coated with the spices.
  3. Prepare Baking Sheet: Spread the seasoned vegetables evenly on a baking sheet to ensure even roasting and caramelization during cooking.
  4. Season Chicken: Season the chicken breasts with salt, pepper, and a little paprika, making sure the spices cover both sides for maximum flavor.
  5. Combine on Baking Sheet: Place the seasoned chicken breasts on the baking sheet alongside the prepared vegetables, giving enough space for heat circulation.
  6. Roast: Roast everything in the preheated oven for 25 to 30 minutes, or until the chicken is cooked through (internal temperature of 165°F / 74°C) and the sweet potatoes and broccoli are tender and slightly caramelized.
  7. Slice and Portion: Once cooked, slice the chicken breasts and divide the chicken and roasted vegetables evenly into meal prep containers for easy grab-and-go lunches or dinners.

Notes

  • Add cooked quinoa or brown rice to your containers for an extra carbohydrate boost and a more filling meal.
  • You can swap broccoli for other vegetables like green beans or Brussels sprouts depending on preference.
  • Store meal prep containers in the refrigerator and consume within 4-5 days for optimal freshness and safety.
