Instructions

  1. Preheat Oven: Preheat your oven to 190°C (375°F) to ensure it is hot and ready for baking the pot pie.
  2. Sauté Onions: Melt the butter in a pan over medium heat, then add the chopped onion and sauté until translucent and fragrant.
  3. Create the Roux: Stir in the flour to the butter and onions, cooking for about 1 minute to eliminate the raw flour taste and form a roux.
  4. Add Liquids: Gradually pour in the chicken broth and milk while stirring continuously to prevent lumps, cooking until the mixture thickens into a creamy sauce.
  5. Combine Filling: Add the diced cooked chicken and mixed vegetables to the sauce, seasoning with salt and pepper to your preference. Stir to combine thoroughly.
  6. Prepare Pie Dish: Pour the chicken and vegetable filling into a pie dish, spreading it evenly.
  7. Apply Crust: Cover the filling with the pie crust, sealing the edges to avoid leaks. Cut slits in the crust to allow steam to escape during baking.
  8. Bake: Place the pie dish in the oven and bake for 30–35 minutes or until the crust turns a golden brown and the filling bubbles slightly.
