Ingredients
Sauté Base
- 1 tbsp olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
Vegetables
- 1 carrot, diced
- 1 celery stalk, chopped
- Optional: 1 cup fresh spinach
Main Ingredients
- 1 cup cooked chicken, shredded
- 1 package (about 2 cups) tortellini (cheese or meat)
Liquids & Seasoning
- 4 cups chicken broth
- Salt and pepper to taste
- Optional: grated parmesan cheese, for serving
Instructions
- Heat Oil: In a large pot over medium heat, warm the olive oil until shimmering.
- Sauté Aromatics: Add the chopped onion and minced garlic to the pot and sauté until fragrant and translucent, about 3-4 minutes.
- Add Vegetables: Stir in the diced carrot and chopped celery, cooking for another 4-5 minutes until they begin to soften.
- Add Broth and Boil: Pour in the chicken broth and bring the mixture to a boil to start forming the soup base.
- Cook Tortellini: Add the tortellini to the boiling broth and cook according to package instructions, typically 5-7 minutes, until tender.
- Add Chicken and Spinach: Stir in the shredded cooked chicken and optional fresh spinach, allowing spinach to wilt and chicken to heat through.
- Season and Serve: Season the soup with salt and pepper to taste. Serve hot, optionally topped with grated parmesan cheese for added flavor.
Notes
- Choose between cheese or meat tortellini based on your preference for flavor and texture.
- For a richer, creamier broth, consider adding a splash of cream or half-and-half before serving.
- Fresh spinach is optional but adds color and nutrients to the soup.
- Leftovers can be stored in the refrigerator for up to 3 days and reheated gently to preserve the tortellini texture.
