- 1 red bell pepper, diced
- ½ onion, diced
- 2 cloves garlic, minced

- 1 tsp smoked paprika
- ½ tsp ground cumin
- ½ tsp garlic powder
- ½ tsp salt
- ¼ tsp black pepper
Garnish and Optional
- 2 tbsp chopped fresh parsley
- 4 fried or poached eggs (optional)
Instructions
- Heat the oil: In a large skillet, heat 2 tablespoons of olive oil over medium heat to prepare for cooking the potatoes.
- Cook the potatoes: Add the diced baby potatoes to the skillet and cook for 10 to 12 minutes, stirring occasionally, until they are tender and golden brown.
- Cook vegetables: Add the diced onion and red bell pepper to the skillet, cooking for an additional 4 minutes until they soften.
- Add garlic and chickpeas: Stir in the minced garlic and drained chickpeas, mixing them well with the vegetables.
- Season the hash: Sprinkle smoked paprika, ground cumin, garlic powder, salt, and black pepper evenly over the mixture to infuse warm, savory flavors.
- Crisp the chickpeas: Continue cooking for another 5 minutes, allowing the chickpeas to become lightly crispy and all ingredients to meld together.
- Garnish and serve: Remove from heat, garnish with fresh chopped parsley, and top with fried or poached eggs if desired for added protein and richness.
Notes
- Sweet potatoes can be used as a substitute for regular baby potatoes for a sweeter, earthier flavor.
