Description

Chinese Ginger Scallion Poached Chicken is a classic Cantonese dish featuring tender, gently poached chicken served with a fragrant and flavorful ginger and scallion sauce. This light and simple recipe highlights the fresh aromatics of ginger and green onions, making it a perfect main dish that pairs wonderfully with steamed rice or fresh vegetables.

Ingredients

Chicken and Broth

  • 1 whole chicken (about 3–4 pounds)
  • 6 cups water
  • 3 slices fresh ginger
  • 2 green onions
  • 1 teaspoon salt

Ginger Scallion Sauce

  • 1/4 cup finely chopped green onions
  • 1 tablespoon grated fresh ginger
  • 2 tablespoons hot vegetable oil
  • 1 tablespoon soy sauce
  • 1/2 teaspoon sesame oil
  • Salt to taste

Instructions

  1. Prepare the Poaching Liquid: Place the whole chicken in a large pot and add 6 cups of water, 3 slices of fresh ginger, 2 green onions, and 1 teaspoon of salt. This creates a flavorful base for poaching.
  2. Poach the Chicken: Bring the pot to a gentle boil over medium heat, then immediately reduce the heat to low to maintain a simmer. Cover and let the chicken simmer gently for 30 to 35 minutes until fully cooked and tender.
  3. Cool and Cut the Chicken: Remove the chicken from the pot and allow it to cool slightly so it can be handled safely. Then chop the chicken into serving pieces, removing skin and bones as desired.
  4. Make the Ginger Scallion Sauce: In a bowl, combine 1/4 cup finely chopped green onions and 1 tablespoon of grated fresh ginger. Heat 2 tablespoons of vegetable oil until it is very hot and pour it over the ginger and scallions to release their flavors.
  5. Finish the Sauce: Stir in 1 tablespoon of soy sauce, 1/2 teaspoon of sesame oil, and salt to taste. Mix well to combine all the sauce ingredients.
  6. Serve: Drizzle the fragrant ginger scallion sauce evenly over the chopped chicken pieces. Serve immediately, ideally with steamed rice and cucumber slices to complement the dish.

Notes

  • Serve alongside steamed jasmine rice and fresh cucumber slices for a balanced meal.
  • Save the poaching broth to use as a flavorful soup stock for other recipes.
  • For an extra depth of flavor, add minced garlic to the ginger scallion sauce.
