Description

Chipotle Chicken Salad is a bold and satisfying meal featuring juicy grilled chipotle-seasoned chicken over a bed of crisp romaine lettuce, cherry tomatoes, creamy avocado, sweet corn, and red onion, all topped with a smoky lime dressing. This flavorful Mexican-inspired salad is perfect for a nutritious lunch, dinner, or easy meal prep option.

Ingredients

Salad

  • 2 boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 tablespoon chipotle seasoning
  • 6 cups romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 avocado, diced
  • ½ cup corn kernels
  • ¼ cup red onion, sliced
  • ¼ cup chopped cilantro

Dressing

  • 2 tablespoons olive oil
  • 1 tablespoon lime juice
  • 1 teaspoon honey
  • ½ teaspoon chipotle powder
  • Salt and pepper, to taste

Instructions

  1. Prepare the Chicken: Rub the chicken breasts evenly with olive oil and chipotle seasoning to coat them thoroughly.
  2. Grill the Chicken: Place the seasoned chicken on a preheated grill over medium-high heat. Cook for 6–7 minutes on each side or until the internal temperature reaches 165°F (75°C) and the chicken is fully cooked.
  3. Rest and Slice: Remove the chicken from the grill and let it rest for 5 minutes to retain juices before slicing it thinly.
  4. Prepare the Salad Base: In a large bowl, combine chopped romaine lettuce, halved cherry tomatoes, diced avocado, corn kernels, sliced red onion, and chopped cilantro.
  5. Make the Dressing: Whisk together olive oil, lime juice, honey, chipotle powder, salt, and pepper until well emulsified.
  6. Assemble the Salad: Top the salad mixture with the sliced grilled chicken, then drizzle the smoky lime dressing evenly over the salad just before serving.

Notes

  • Add black beans to the salad for extra protein and fiber.
  • Serve the salad immediately after adding the dressing for the best texture and flavor.
  • For meal prep, keep the dressing separate until ready to serve to prevent sogginess.
