Description

Light and airy meringues with a crisp exterior and soft center, dipped in rich chocolate for an elegant and irresistible treat.

Ingredients

Meringue Ingredients

  • 3 egg whites
  • 3/4 cup sugar
  • 1/2 teaspoon vanilla extract

Chocolate Dip

  • 1 cup chocolate chips or chopped chocolate
  • 1 teaspoon coconut oil

Instructions

  1. Preheat the oven: Set your oven to 100°C (210°F) to ensure a low temperature for slow baking, which helps meringues dry out without browning.
  2. Beat egg whites: In a clean bowl, beat the 3 egg whites until they reach soft peaks, where they hold shape but still have a slight droop.
  3. Add sugar gradually: While continuing to beat, slowly add the sugar ensuring it dissolves and the meringue mixture forms stiff, glossy peaks that stand firmly.
  4. Mix in vanilla extract: Gently fold in the 1/2 teaspoon of vanilla extract to infuse flavor evenly throughout the meringue.
  5. Shape the meringues: Pipe or spoon the meringue mixture onto a baking tray lined with parchment paper, spacing them adequately to avoid sticking.
  6. Bake: Place the tray in the preheated oven and bake for 1.5 to 2 hours. This low and slow baking dries the meringues, making them crisp on the outside.
  7. Cool: Allow the baked meringues to cool completely, which firms them further and prepares them for chocolate dipping.
  8. Melt chocolate with coconut oil: In a heatproof bowl, melt the chocolate chips or chopped chocolate together with the coconut oil until smooth, either using a microwave in short bursts or a double boiler.
  9. Dip meringues: Dip each meringue halfway into the melted chocolate and place on parchment paper to let the chocolate set, creating a delicious chocolate coating on each.

Notes

  • Ensure the bowl and beaters are completely clean and free of grease for optimal egg white whipping.
  • Bake at a low temperature to avoid browning and keep the meringues crisp and white.
  • Store the finished meringues in an airtight container to preserve their texture and keep them crisp.
