- Beat egg whites: In a clean bowl, beat the 3 egg whites until they reach soft peaks, where they hold shape but still have a slight droop.
- Add sugar gradually: While continuing to beat, slowly add the sugar ensuring it dissolves and the meringue mixture forms stiff, glossy peaks that stand firmly.
- Mix in vanilla extract: Gently fold in the 1/2 teaspoon of vanilla extract to infuse flavor evenly throughout the meringue.
- Shape the meringues: Pipe or spoon the meringue mixture onto a baking tray lined with parchment paper, spacing them adequately to avoid sticking.
- Bake: Place the tray in the preheated oven and bake for 1.5 to 2 hours. This low and slow baking dries the meringues, making them crisp on the outside.
