Instructions
- Cook Chorizo: Heat a skillet over medium heat and add the chorizo sausage. Cook until the chorizo is browned and cooked through, about 5-7 minutes.
- Sauté Vegetables: Add diced onions and bell peppers to the skillet with the chorizo. Cook until the vegetables are softened, about 3-4 minutes, stirring occasionally.
- Prepare Eggs: In a separate bowl, whisk the eggs and season with salt and pepper to taste.
- Scramble Eggs: Pour the whisked eggs into the skillet with the chorizo and vegetables. Stir continuously to scramble the eggs until they are cooked to your preferred consistency.
- Warm Tortillas: While the eggs are cooking, warm the tortillas either in a separate dry skillet over medium heat or in the microwave wrapped in a damp paper towel to make them pliable.
