Description

Crispy, cheesy quesadillas filled with zesty cilantro-lime chicken—fresh, flavorful, and perfect for a quick meal that you can prepare in just 20 minutes.

Ingredients

Chicken Mixture

  • 2 cups cooked chicken (shredded)
  • 1 tbsp lime juice
  • 2 tbsp fresh cilantro (chopped)
  • 1/2 tsp garlic powder
  • 1/2 tsp cumin

Quesadillas

  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 4 flour tortillas
  • 1 tbsp oil or butter

Instructions

  1. Prepare the Chicken Mixture: In a bowl, mix the shredded cooked chicken with lime juice, chopped cilantro, garlic powder, and cumin until all ingredients are well combined and the chicken is infused with the zesty flavors.
  2. Heat the Skillet: Place a skillet or frying pan over medium heat and add oil or butter to coat the surface evenly, ensuring even cooking and a crispy texture.
  3. Assemble the Quesadilla: Place one flour tortilla onto the hot skillet. Sprinkle a generous amount of shredded cheese evenly over the tortilla to allow it to melt and act as a binder.
  4. Add Chicken Layer: Spread the prepared cilantro-lime chicken mixture evenly over the cheese layer, then add another layer of shredded cheese on top to help seal the quesadilla when the top tortilla is added.
  5. Top and Cook: Cover the chicken and cheese layers by placing a second tortilla on top. Cook until the bottom tortilla turns golden brown and crispy, about 3-4 minutes.
  6. Flip Carefully: Using a spatula, carefully flip the quesadilla to cook the other side until it is also golden brown and the cheese inside has fully melted, about another 3-4 minutes.
  7. Serve: Remove from the skillet, slice into wedges, and serve warm with optional sides like sour cream, salsa, or guacamole.

Notes

  • Serve with sour cream, salsa, or guacamole for added flavor.
  • Add sliced jalapeños to the chicken mixture for an extra spicy kick.
  • Use a non-stick skillet to prevent sticking and ensure easy flipping.
  • Leftover quesadillas can be refrigerated and reheated in a skillet or air fryer for crispiness.
