Description
Crispy, cheesy quesadillas filled with zesty cilantro-lime chicken—fresh, flavorful, and perfect for a quick meal that you can prepare in just 20 minutes.
Ingredients
Chicken Mixture
- 2 cups cooked chicken (shredded)
- 1 tbsp lime juice
- 2 tbsp fresh cilantro (chopped)
- 1/2 tsp garlic powder
- 1/2 tsp cumin
Quesadillas
- 1 cup shredded cheese (cheddar or Mexican blend)
- 4 flour tortillas
- 1 tbsp oil or butter
Instructions
- Prepare the Chicken Mixture: In a bowl, mix the shredded cooked chicken with lime juice, chopped cilantro, garlic powder, and cumin until all ingredients are well combined and the chicken is infused with the zesty flavors.
- Heat the Skillet: Place a skillet or frying pan over medium heat and add oil or butter to coat the surface evenly, ensuring even cooking and a crispy texture.
- Assemble the Quesadilla: Place one flour tortilla onto the hot skillet. Sprinkle a generous amount of shredded cheese evenly over the tortilla to allow it to melt and act as a binder.
- Add Chicken Layer: Spread the prepared cilantro-lime chicken mixture evenly over the cheese layer, then add another layer of shredded cheese on top to help seal the quesadilla when the top tortilla is added.
- Top and Cook: Cover the chicken and cheese layers by placing a second tortilla on top. Cook until the bottom tortilla turns golden brown and crispy, about 3-4 minutes.
- Flip Carefully: Using a spatula, carefully flip the quesadilla to cook the other side until it is also golden brown and the cheese inside has fully melted, about another 3-4 minutes.
- Serve: Remove from the skillet, slice into wedges, and serve warm with optional sides like sour cream, salsa, or guacamole.
Notes
- Serve with sour cream, salsa, or guacamole for added flavor.
- Add sliced jalapeños to the chicken mixture for an extra spicy kick.
- Use a non-stick skillet to prevent sticking and ensure easy flipping.
- Leftover quesadillas can be refrigerated and reheated in a skillet or air fryer for crispiness.
