Ingredients

Salmon

  • Juice of 1 lime

Avocado Salsa

  • 2 ripe avocados, diced
  • 1 cup diced tomatoes
  • ¼ cup finely chopped red onion
  • ¼ cup chopped fresh cilantro
  • Juice of 1 lime
  • Salt and black pepper, to taste


Instructions

  1. Season the Salmon: In a small bowl, mix garlic powder, paprika, salt, and pepper. Rub this seasoning mixture evenly over each salmon fillet. Drizzle the juice of one lime over the fillets to add freshness and a citrusy tang.
  2. Heat the Skillet: Place a large skillet over medium-high heat and add the olive oil. Allow the oil to heat up until shimmering but not smoking, ensuring a good sear on the salmon.
  3. Cook the Salmon: Add the seasoned salmon fillets skin-side down (if skin-on) to the hot skillet. Cook for 4 to 5 minutes without moving, until the bottoms are golden and crisp. Flip the salmon carefully and cook the other side for an additional 4 to 5 minutes, or until the salmon flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
  4. Prepare the Avocado Salsa: While the salmon cooks, combine the diced avocados, diced tomatoes, finely chopped red onion, chopped cilantro, lime juice, salt, and black pepper in a bowl. Gently toss to mix all ingredients without mashing the avocados.
  5. Serve: Spoon the fresh avocado salsa generously over each cooked salmon fillet. Serve immediately alongside your choice of rice, quinoa, or roasted vegetables for a complete meal.
