Description

This Cilantro Lime Shrimp Bowl is a vibrant and satisfying meal featuring juicy shrimp, fluffy rice, black beans, corn, avocado, and a fresh cilantro lime dressing. Quick to prepare and perfect for busy weeknights or healthy meal prep, it combines bold Mexican-inspired flavors with wholesome ingredients in a colorful, balanced bowl.

Ingredients

For the Shrimp

  • 1 pound large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • ½ teaspoon paprika
  • Salt and black pepper, to taste

For the Bowl

  • 3 cups cooked white or brown rice
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup cherry tomatoes, halved
  • 1 avocado, sliced
  • ¼ cup chopped cilantro
  • Lime wedges, for garnish

Cilantro Lime Dressing

  • 2 tablespoons olive oil
  • 2 tablespoons fresh lime juice
  • 1 tablespoon chopped cilantro
  • 1 teaspoon honey
  • Salt and pepper, to taste

Instructions

  1. Season the shrimp: In a bowl, toss the peeled and deveined shrimp with chili powder, garlic powder, paprika, salt, and black pepper until evenly coated, ensuring each shrimp is flavorful.
  2. Cook the shrimp: Heat 1 tablespoon olive oil in a skillet over medium-high heat. Add the seasoned shrimp to the skillet and cook for 2–3 minutes on each side until the shrimp turn pink and are fully cooked through. Remove from heat.
  3. Prepare the dressing: In a small bowl, whisk together olive oil, fresh lime juice, chopped cilantro, honey, salt, and pepper until the dressing is smooth and emulsified.
  4. Assemble the bowls: Divide the cooked rice evenly among four serving bowls. Top each with black beans, corn kernels, halved cherry tomatoes, sliced avocado, and the cooked shrimp.
  5. Add the dressing and garnish: Drizzle the cilantro lime dressing generously over each bowl. Garnish with additional fresh chopped cilantro and lime wedges for squeezing just before eating.

Notes

  • Swap shrimp for grilled chicken or tofu to vary protein options.
  • Add shredded lettuce for extra freshness and crunch.
  • This recipe is ideal for meal prep when the dressing is stored separately to keep ingredients fresh.
