- 1–2 tbsp cold water
- 1/2 tsp chili flakes
- 1 cucumber, julienned
- 2 green onions, sliced
- 1 tbsp sesame seeds
Instructions
- Cook noodles: Bring a large pot of water to a boil and cook the noodles according to the package directions until al dente.
- Chill noodles: Drain the noodles and rinse thoroughly under cold water to stop the cooking process and cool them down for the cold dish.
- Prepare sauce: In a bowl, whisk together tahini, soy sauce, rice vinegar, sesame oil, honey, peanut butter, minced garlic, grated ginger, and chili flakes until combined and creamy.
- Adjust sauce consistency: Slowly add cold water, 1 tablespoon at a time, whisking until the sauce reaches a smooth and pourable consistency suitable for tossing with noodles.
- Toss noodles with sauce: Add the chilled noodles to the bowl with the sesame sauce and toss gently to coat all noodles evenly.
- Add vegetables: Incorporate the julienned cucumber and sliced green onions into the noodles, mixing gently to combine.
- Garnish and serve: Sprinkle sesame seeds over the dish as garnish and serve the sesame noodles cold for best flavor and texture.
