Description

Soft, fluffy breakfast biscuits made with cottage cheese—high in protein, lightly savory, and perfect for a quick morning bite.

Ingredients

Dry Ingredients

  • 1 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt

Wet Ingredients

  • 1 cup cottage cheese
  • 1 egg
  • 23 tbsp milk (as needed)

Other

  • 1/4 cup butter (cold, cubed)

Instructions

  1. Preheat Oven: Preheat oven to 200°C (400°F) and line a baking sheet with parchment paper to prevent sticking.
  2. Mix Dry Ingredients: In a large bowl, combine the all-purpose flour, baking powder, and salt, mixing thoroughly to ensure even distribution.
  3. Cut in Butter: Add the cold, cubed butter to the dry mixture and cut it in using a pastry cutter or fingers until the mixture resembles coarse crumbs with pea-sized pieces.
  4. Add Wet Ingredients: Stir in the cottage cheese and egg until combined, incorporating moisture and richness into the dough.
  5. Incorporate Milk: Gradually add 2 to 3 tablespoons of milk, just enough to bring the dough together into a soft, slightly sticky ball, being careful not to overmoisten.
  6. Shape Dough: Roll or pat the dough out on a lightly floured surface to about 2 cm (3/4 inch) thickness for even baking and tender biscuits.
  7. Cut Biscuits: Use a biscuit cutter or a glass to cut out round biscuits and place them spaced evenly on the prepared baking sheet.
  8. Bake: Bake in the preheated oven for 12 to 15 minutes until the biscuits are puffed and golden brown on top.
  9. Serve: Remove from oven and serve warm for the best texture and flavor.

Notes

  • Don’t overmix the dough to keep the biscuits tender and flaky.
  • Enhance flavor by adding fresh herbs like chives or shredded cheddar cheese into the dough.
  • Best enjoyed fresh but can be reheated briefly in the oven or microwave.
