Cowboy Soup is a hearty and flavorful Tex-Mex–inspired dish made with ground beef, a medley of beans, fresh vegetables, and zesty tomatoes. This filling soup is perfect for cold nights or feeding a crowd with its delicious blend of spices and wholesome ingredients.

- 1 tsp smoked paprika
- 1/2 tsp cumin
- 1/2 tsp oregano
- Salt & pepper, to taste

Instructions
- Browning the Meat and Onions: In a large pot or Dutch oven, cook the ground beef and diced onion over medium-high heat until the meat is browned and the onions are softened. Drain any excess fat if needed to keep the soup from becoming greasy.
- Sautéing Garlic: Add the minced garlic to the pot and cook for about 30 seconds until fragrant, being careful not to burn it.
- Adding Liquids and Vegetables: Stir in the beef broth, canned diced tomatoes with juice, Rotel (diced tomatoes with green chilies), drained pinto beans, drained corn, diced potatoes, and sliced carrots.
- Seasoning the Soup: Sprinkle in the chili powder, smoked paprika, cumin, oregano, and season with salt and pepper to taste. Stir well to combine all the flavors.
- Simmering: Bring the soup to a boil over high heat, then reduce the heat to low and let it simmer uncovered for 25 to 30 minutes. This allows the potatoes and carrots to become tender and the flavors to meld together.
- Adjusting the Flavor: Taste the soup and adjust the seasoning by adding more salt, pepper, or spices if needed to suit your preference.
- Serving: Ladle the soup into bowls and garnish with freshly chopped cilantro or parsley if desired. Serve hot with cornbread, biscuits, or tortilla chips for a complete meal.
