Description

Tender chicken breasts cooked in a sweet and tangy cranberry-orange sauce that’s perfect for weeknight dinners or holiday meals. The combination of citrus and cranberries creates a bright, flavorful dish everyone will love.

Ingredients

Chicken

  • 4 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • Salt and black pepper, to taste
  • 1 tsp garlic powder

Sauce

  • 1 cup cranberry sauce
  • ½ cup orange juice
  • 1 tbsp orange zest
  • 1 tbsp Dijon mustard
  • 1 tbsp honey

Garnish

  • Fresh parsley, for garnish

Instructions

  1. Season the chicken: Season the chicken breasts on both sides with salt, black pepper, and garlic powder to enhance the flavor before cooking.
  2. Heat the skillet and cook chicken: Heat olive oil in a large skillet over medium-high heat. Once hot, add the chicken breasts and cook for 5 to 6 minutes on each side until they are golden brown and cooked through. Remove chicken from the skillet and set aside.
  3. Prepare the sauce: In the same skillet, combine cranberry sauce, orange juice, orange zest, Dijon mustard, and honey. Whisk the ingredients together well to create a smooth and flavorful sauce.
  4. Simmer the sauce: Allow the sauce to simmer for 3 to 5 minutes on medium heat until it thickens slightly, concentrating the flavors.
  5. Reheat chicken in sauce: Return the cooked chicken breasts back to the skillet. Spoon the sauce over the chicken and simmer for an additional 2 to 3 minutes until the chicken is heated through and well coated in the sauce.
  6. Garnish and serve: Sprinkle freshly chopped parsley over the chicken for a bright, fresh finish. Serve immediately with your choice of side dishes.

Notes

  • Serve with rice, mashed potatoes, or roasted vegetables for a complete meal.
  • Use fresh cranberries instead of canned cranberry sauce when in season to make a homemade sauce.
  • For a festive touch, add a pinch of cinnamon to the sauce for a holiday-inspired flavor.
