Description

Cream of Black Cabbage and Beans is a hearty and nourishing soup made with tender black cabbage (Tuscan kale), creamy white beans, and aromatic herbs. This rustic Mediterranean-inspired dish is comforting, flavorful, and perfect for a wholesome meal, blending tender vegetables with a creamy texture and a hint of lemon.

Ingredients

Vegetables and Herbs

  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 2 cups chopped black cabbage (Tuscan kale)

Beans and Broth

  • 1 can (15 oz) white beans, drained and rinsed
  • 4 cups vegetable broth

Seasonings and Garnish

  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon lemon juice
  • 2 tablespoons grated Parmesan cheese (optional)

Instructions

  1. Heat the Oil: Heat olive oil in a large pot over medium heat to prepare for sautéing the vegetables.
  2. Sauté Vegetables: Add diced onion, carrot, and celery to the pot and sauté for 4–5 minutes until they become softened and aromatic.
  3. Add Garlic: Stir in minced garlic and cook for an additional minute to release its flavor.
  4. Cook Black Cabbage: Add the chopped black cabbage and cook until it wilts slightly, about 3-4 minutes, stirring occasionally.
  5. Combine Beans and Broth: Stir in the rinsed white beans, vegetable broth, dried thyme, salt, and black pepper to the pot.
  6. Simmer the Soup: Bring the soup to a boil, then reduce the heat and let it simmer gently for 20 minutes to develop flavors.
  7. Blend Soup: Using an immersion blender, blend half of the soup directly in the pot until creamy, leaving the rest chunky for texture.
  8. Finish and Serve: Stir in lemon juice to brighten the flavors, then ladle into bowls and garnish with grated Parmesan cheese if desired before serving.

Notes

  • Substitute spinach or regular kale if black cabbage is unavailable.
  • Serve with crusty bread for a complete meal.
  • Store leftovers in the refrigerator for up to 4 days, reheating gently before serving.
