Ingredients

Pasta

  • 250 g pasta (spaghetti or penne)

Sauce

  • 2 ripe avocados
  • 2 cloves garlic
  • 2 tablespoons olive oil
  • Juice of 1 lemon
  • 30 g grated parmesan cheese
  • Salt and black pepper to taste

Garnish

  • Fresh basil (optional)


Instructions

  1. Cook the pasta: Cook the pasta according to package instructions until al dente. Before draining, reserve 1/2 cup of the pasta cooking water for later use.
  2. Prepare the sauce: In a blender, combine ripe avocados, garlic cloves, olive oil, lemon juice, and grated parmesan cheese. Blend the mixture until it becomes smooth and creamy.
  3. Adjust sauce consistency: Add a little of the reserved pasta water to the avocado sauce as needed to loosen it and achieve a silky texture suitable for coating the pasta.
  4. Toss pasta with sauce: Place the drained pasta back in the pot or a large bowl and toss it thoroughly with the avocado sauce until every strand or piece is well coated.
  5. Season and garnish: Season the avocado pasta with salt and black pepper to taste. Optionally, garnish with fresh basil leaves for added aroma and color.

Notes

  • Best served immediately to prevent the avocado sauce from browning.
  • Add cherry tomatoes or grilled chicken to vary the dish and add extra flavor or protein.
