Ingredients
Vegetables
- 1/2 onion, chopped
- 2 cloves garlic, minced
- 2 medium potatoes, diced
- 2 cups broccoli florets
Liquids and Dairy
- 2 tablespoons butter
- 4 cups chicken or vegetable broth
- 1 cup milk or cream
- 1 1/2 cups shredded sharp cheddar cheese
Seasonings
- Salt, to taste
- Black pepper, to taste
Instructions
- Sauté Aromatics: Melt the butter in a large pot over medium heat. Add the chopped onion and minced garlic, sautéing until they are fragrant and softened, about 3-5 minutes.
- Cook Potatoes: Add the diced potatoes to the pot along with the chicken or vegetable broth. Bring the mixture to a boil.
- Simmer Potatoes: Reduce the heat to low and let it simmer for 15 minutes, or until the potatoes are tender when pierced with a fork.
- Add Broccoli: Stir in the broccoli florets and continue cooking until the broccoli is tender, about 5-7 minutes.
- Blend Soup (Optional): For a creamier texture, carefully blend part of the soup using an immersion blender or by transferring some to a blender, then return it to the pot.
- Add Milk and Cheese: Stir in the milk or cream and shredded cheddar cheese, continuing to cook gently until the cheese is fully melted and incorporated into the soup. Avoid boiling to prevent curdling.
- Season and Serve: Taste and season the soup with salt and black pepper as needed. Serve the soup hot, garnished if desired.
Notes
- Use sharp cheddar cheese for a more robust and flavorful soup.
- Do not boil the soup after adding cheese to prevent curdling and maintain smoothness.
- For extra color and nutrition, add diced carrots when sautéing the onions and garlic.
