Ingredients
Pasta and Protein
- 8 ounces pasta (fettuccine, penne, or linguine recommended)
- 1 pound boneless, skinless chicken breast, cut into bite-sized pieces
- 2 tablespoons Cajun seasoning
Sauce and Vegetables
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1 small onion, diced
- 1 bell pepper, diced
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- Salt, to taste
- Black pepper, to taste
Garnish
- 2 tablespoons fresh parsley, chopped
- Additional Parmesan cheese, for serving
Instructions
- Cook the pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve about 1/2 cup of pasta water before draining the pasta and set aside.
- Prepare the chicken: Pat the chicken pieces dry and evenly coat them with Cajun seasoning. Heat olive oil and butter in a large skillet over medium-high heat. Add the seasoned chicken and cook, stirring occasionally, until browned and fully cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside on a plate.
- Sauté vegetables: In the same skillet, add the diced onion and bell pepper. Cook over medium heat, stirring frequently, until the vegetables soften and become fragrant, about 4-5 minutes.
- Add garlic: Stir in the minced garlic and cook for about 30 seconds to 1 minute until aromatic but not burnt.
- Make the sauce: Pour in the chicken broth and heavy cream, stirring to combine. Bring the mixture to a gentle simmer, allowing it to thicken slightly, about 3-4 minutes.
- Incorporate cheese: Gradually stir in the grated Parmesan cheese until fully melted and the sauce becomes creamy and smooth.
- Combine chicken and pasta: Return the cooked chicken to the skillet. Add the drained pasta and toss everything together until the pasta is evenly coated with the sauce and chicken is well distributed.
- Adjust sauce consistency: If the sauce is too thick, gradually add some of the reserved pasta water to reach your desired creamy consistency.
- Season and garnish: Taste the dish and adjust seasoning with salt and black pepper as needed. Sprinkle fresh chopped parsley and additional Parmesan cheese on top before serving.
- Serve warm: Serve the creamy Cajun pasta immediately with your favorite sides such as garlic bread or a fresh green salad.
Notes
- You can substitute chicken with shrimp, sausage, or steak according to preference.
- Add vegetables such as spinach, mushrooms, broccoli, or sun-dried tomatoes for extra flavor and nutrition.
- For extra heat, increase the Cajun seasoning or add red pepper flakes.
- Leftovers should be stored in an airtight container in the refrigerator for up to 4 days.
- Reheat gently in a skillet or microwave with a splash of milk, cream, or broth to loosen the sauce.
- The creamy sauce is best made with heavy cream but can be substituted with milk for a lighter version; however, the sauce will be less rich.
- Use mild Cajun seasoning to reduce spiciness if desired.
- Freezing is possible but may alter the texture of the creamy sauce upon thawing.
