Ingredients
Chicken
- 2 chicken breasts
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Sauce
- 1 cup mushrooms, sliced
- 1/2 cup Marsala wine (use cooking Marsala if needed)
- 1/2 cup cream
- 2 cloves garlic, minced
Cooking Fats
- 2 tablespoons butter
- 2 tablespoons olive oil
Instructions
- Season the chicken. Pat the chicken breasts dry and season both sides evenly with salt and black pepper to enhance the flavor.
- Cook the chicken. Heat olive oil and butter in a large skillet over medium heat. Once hot, add the chicken breasts and cook until golden brown on both sides and fully cooked through, about 6-7 minutes per side. Remove chicken from the pan and set aside.
- Sauté the mushrooms. In the same skillet, add the sliced mushrooms and cook until they become soft and release their moisture, approximately 5 minutes.
- Add garlic. Stir in the minced garlic and sauté briefly, about 1 minute, until fragrant but not browned.
- Deglaze with Marsala wine. Pour in the Marsala wine to deglaze the pan, scraping up any browned bits from the bottom. Let it simmer for a few minutes until the wine reduces slightly and the alcohol cooks off.
- Make the cream sauce and combine. Stir in the cream, mixing well to create a rich sauce. Return the cooked chicken breasts to the pan, spooning the sauce over them.
- Finish cooking. Continue to cook over low heat until the sauce thickens to your liking and the chicken is heated through, about 5 minutes.
- Serve. Serve the creamy chicken Marsala warm, ideally alongside pasta or mashed potatoes, garnished with fresh parsley if desired.
