Ingredients

Chicken

  • 2 chicken breasts
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Sauce

  • 1 cup mushrooms, sliced
  • 1/2 cup Marsala wine (use cooking Marsala if needed)
  • 1/2 cup cream
  • 2 cloves garlic, minced

Cooking Fats

  • 2 tablespoons butter
  • 2 tablespoons olive oil


Instructions

  1. Season the chicken. Pat the chicken breasts dry and season both sides evenly with salt and black pepper to enhance the flavor.
  2. Cook the chicken. Heat olive oil and butter in a large skillet over medium heat. Once hot, add the chicken breasts and cook until golden brown on both sides and fully cooked through, about 6-7 minutes per side. Remove chicken from the pan and set aside.
  3. Sauté the mushrooms. In the same skillet, add the sliced mushrooms and cook until they become soft and release their moisture, approximately 5 minutes.
  4. Add garlic. Stir in the minced garlic and sauté briefly, about 1 minute, until fragrant but not browned.
  5. Deglaze with Marsala wine. Pour in the Marsala wine to deglaze the pan, scraping up any browned bits from the bottom. Let it simmer for a few minutes until the wine reduces slightly and the alcohol cooks off.
  6. Make the cream sauce and combine. Stir in the cream, mixing well to create a rich sauce. Return the cooked chicken breasts to the pan, spooning the sauce over them.
  7. Finish cooking. Continue to cook over low heat until the sauce thickens to your liking and the chicken is heated through, about 5 minutes.
  8. Serve. Serve the creamy chicken Marsala warm, ideally alongside pasta or mashed potatoes, garnished with fresh parsley if desired.
