Ingredients
Chicken and Seasoning
- 1½ lbs boneless, skinless chicken breasts
- 1 teaspoon garlic powder
- ½ teaspoon paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
For Cooking
- 2 tablespoons olive oil
- 1 tablespoon butter
Mushroom Sauce
- 8 oz cremini or button mushrooms, sliced
- 1 small yellow onion, finely diced
- 3 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1 cup low-sodium chicken broth
- ¾ cup heavy cream
- ½ cup grated Parmesan cheese
Finishing
- 1 tablespoon fresh parsley, chopped
- 1 teaspoon fresh lemon juice
Instructions
- Prepare and Season Chicken: Slice the chicken breasts into thinner cutlets if necessary to ensure even cooking. Season both sides of the chicken breasts evenly with garlic powder, paprika, salt, and black pepper to infuse flavor.
- Cook Chicken: Heat olive oil and butter in a large skillet over medium-high heat until hot. Add the seasoned chicken breasts to the skillet and cook for 4–5 minutes on each side until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set aside on a plate.
- Sauté Mushrooms and Onion: In the same skillet, add the sliced mushrooms and diced onion. Cook for 5–7 minutes, stirring occasionally, until the mushrooms are browned and the onions have softened, developing rich flavors.
- Add Garlic and Seasoning: Stir in the minced garlic and Italian seasoning. Cook for about 30 seconds, just until fragrant, being careful not to burn the garlic.
- Deglaze Skillet: Pour in the chicken broth and use a wooden spoon to scrape the bottom of the skillet, lifting any browned bits and incorporating them into the sauce. Let the mixture simmer for 2 minutes to reduce slightly and deepen the flavor.
- Add Cream and Cheese: Lower the heat to medium-low and stir in the heavy cream and grated Parmesan cheese. Continue simmering the sauce for 3–4 minutes, stirring occasionally, until it thickens to a creamy consistency.
- Return Chicken to Skillet: Place the cooked chicken back into the skillet, nestling it into the mushroom cream sauce. Spoon sauce over the top of the chicken and simmer together for another 2–3 minutes to heat through and let flavors meld.
- Finish and Garnish: Stir in fresh lemon juice to brighten the sauce. Garnish with chopped fresh parsley before serving.
- Serve: Serve the creamy mushroom chicken warm accompanied by your choice of mashed potatoes, rice, pasta, or steamed vegetables for a complete meal.
Notes
- Chicken thighs can be substituted for chicken breasts; they remain especially juicy.
- For a lighter sauce, use half-and-half instead of heavy cream without sacrificing flavor.
- Add fresh spinach during the last few minutes of simmering to incorporate extra vegetables.
- Variations in mushrooms such as baby bella, white button, or a blend can be used based on preference.
- Avoid overcrowding the skillet when cooking mushrooms for better browning and enhanced flavor.
