Description

A rich and comforting Italian-inspired creamy sausage and bean soup featuring savory browned sausage, tender white beans, and a luscious creamy broth, perfect for a satisfying and hearty meal any day.

Ingredients

Sausage and Vegetables

  • 1 lb sausage
  • 1 tbsp olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced

Soup Base

  • 1 can white beans, drained
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Garnish

  • Fresh parsley for garnish

Instructions

  1. Brown the Sausage: Heat the olive oil in a large pot over medium heat. Add the sausage and cook, breaking it up with a spoon, until it is browned and cooked through, about 5-7 minutes.
  2. Sauté Aromatics: Add the chopped onion and minced garlic to the pot with the sausage. Cook, stirring occasionally, until the onion is translucent and the garlic is fragrant, about 3-4 minutes.
  3. Add Beans and Broth: Stir in the drained white beans and pour in the chicken broth. Bring the mixture to a simmer.
  4. Simmer the Soup: Allow the soup to simmer gently for 15 minutes to let the flavors meld together.
  5. Add Cream and Seasonings: Stir in the heavy cream and Italian seasoning. Continue simmering the soup for another 5 minutes to heat through and thicken slightly.
  6. Adjust Seasoning and Serve: Taste the soup and season with additional salt and pepper as desired. Garnish with fresh parsley and serve warm for a comforting meal.

Notes

  • Use spicy sausage for extra flavor and a bit of heat.
  • Substitute heavy cream with milk for a lighter, less rich version of the soup.
  • Add fresh spinach or kale during the simmering step for added nutrients and color.
