Description

A rich and luxurious risotto combining tender steak and succulent seafood in a creamy, velvety base. This surf and turf dish delivers bold flavor and restaurant-quality comfort, perfect for an impressive main course.

Ingredients

Main Ingredients

  • 1 cup Arborio rice
  • 200 g beef steak, cut into small pieces
  • 150 g shrimp or mixed seafood
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups warm beef or chicken broth
  • 2 tablespoons butter
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • Salt and black pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. Sear the Steak: Heat olive oil in a pan over medium-high heat. Add the steak pieces and sear until browned on all sides, about 3-4 minutes. Remove the steak pieces from the pan and set aside.
  2. Cook the Seafood: Using the same pan, add the shrimp or mixed seafood and cook until just done and opaque, approximately 2-3 minutes. Remove and set aside with the steak.
  3. Sauté Aromatics: In the pan, add the finely chopped onion and minced garlic. Sauté over medium heat until they become soft and translucent, about 3-4 minutes, stirring frequently to avoid burning.
  4. Toast the Rice: Add the Arborio rice to the pan with the sautéed onions and garlic. Stir continuously to coat the rice in the oil and toast it for 1–2 minutes until the edges of the grains become translucent.
  5. Add Broth Gradually: Begin adding the warm broth one ladle at a time, stirring continuously. Wait until most of the liquid is absorbed before adding the next ladle. This gradual addition helps release the rice’s creamy starches.
  6. Cook Until Tender: Continue adding broth and stirring for about 20 minutes until the rice is al dente — creamy and tender but with a slight bite in the center.
  7. Finish the Risotto: Stir in the butter and grated Parmesan cheese until melted and fully incorporated, creating a rich and velvety texture.
  8. Combine Surf and Turf: Return the seared steak and cooked seafood to the pan and gently fold them into the risotto to warm through, about 1-2 minutes.
  9. Season and Garnish: Taste and adjust salt and black pepper as needed. Garnish with freshly chopped parsley before serving immediately for best flavor and texture.

Notes

  • Use warm broth to ensure even cooking and creamy consistency.
  • Avoid overcooking the seafood to keep it tender and succulent.
  • Add a touch of lemon zest for extra brightness and contrast if desired.
